Some evenings just call for something warm on a plate — no fuss, no waiting. This egg bhurji on toast is that little bit of comfort you can whip up in minutes, the kind of meal that turns a tired day into a soft, easy one.
Ingredients
- 2 fresh Nila Eggs
- 1 small onion (finely chopped)
- 1 green chilli (chopped)
- 1 small tomato (chopped)
- ¼ tsp turmeric powder
- ¼ tsp red chilli powder
- 2 slices of bread
- 1 tbsp butter or oil
- Salt to taste
- Coriander leaves for garnish
Instructions
- Heat butter in a pan. Sauté onion and green chilli until soft.
- Add tomato, turmeric, chilli powder, and salt. Cook until the tomato softens.
- Whisk the Nila Eggs lightly. Pour into the pan.
- Stir gently as the eggs set — soft, folded curds, not fully dry.
- While the bhurji cooks, toast the bread.
- Spoon the bhurji over the toast. Garnish with coriander.
- Eat immediately, before the toast loses its crunch.
